“Baking in the Buff”

So basically I had a crazy idea of trying to make a Black & Tan Beer Bread! However, I wanted it to be a little “desert-y”, similar to the consistency of banana nut bread.

So I did 2 different batches, which get swirled together at the end.

Here is the base recipe for each batch.

3 cups flour
2 tsps salt
2 tsps active yeast
1 beer
1/2 cup warm water

I’m using Guinness for the first one, I chose Guinness Nitro which is a coffee Stout. Added approx 3 tsps of cocoa powder and a little brown sugar.

In the other I used a lager with vanilla extract, a little bit of cinnamon and also 1 tsps sugar.

After mixing, cover and let stand a minumum of 2 hours.

Pour Guinness mix into baking pan, then add the lager mix on top. You can layer these however you want. I had best results by alternating.

Sprinkle top with mixture of brown sugar, cinnamon and a little regular cane sugar. Add a small handful of craisens.

Swirl.

Then bake at 450 for 40 mins.

I recommend pulling out after 20 mins to baste with melted butter combined with your leftover cinnamon mixture. Then put back in for the remaining 20mins. You can also take it out at 35min if you want a doughier bread.

Make sure you spray your pans with cooking spray so it pops out easily! Hope you enjoyed as much as I did!
